The first step to this wonderful ham fritters recipe is to combine biscuit mix and sugar together until well blended. Set aside. In another mixing bowl beat the large egg with the non-fat milk.  Combine the wet ingredients into the dry until they are well moistened. You want to fold in the corn half a cup at a time. In a large skillet or deep fryer you want to heat the oil to 375 degrees. Drop in a large spoon full amount and let fry on each side for 1 minute. Should be nice and golden brown. Be sure to place the done Fritters onto a paper towel for oil absorption. Serve as an appetizer or even a main dish. Serve warm with juice.</p>

In a mixing bowl beat eggs, milk, salt and pepper until they are well blended. set egg mixture aside. Add butter to a nonstick skillet or large frying pan over medium high heat. add the tender potato&#8217;s to the butter and cook an additional 3 minutes. Add onions and Jalapenos and cook until onions and Jalapenos are glazed. Pour egg mixture into skillet with potato&#8217;s, onions and jalapenos. 2. Bake at 350 degrees F for 25 minutes. Sprinkle with cheese; bake 5 minutes longer or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.</p>
