Ingredients:
1 Pound Cubed Red Potato’s
6 Large Eggs
1/3 Cup Non-Fat Milk
1 Pinch Of Salt
2 Jalapenos Dices Or Minced
2 Tablespoons Margarine Or Butter
1/2 Cup Sliced Onions
6 Sliced Cooked Bacon Bits

Cooking Directions:
Heat 1 inch of water in a nonstick saucepan to a boil. Add potato’s cover and reduce to a medium low simmer for about 6-8 minutes or until potato’s are tender. Drain off water once done. In a mixing bowl beat eggs, milk, salt and pepper until they are well blended. set egg mixture aside. Add butter to a nonstick skillet or large frying pan over medium high heat. add the tender potato’s to the butter and cook an additional 3 minutes. Add onions and Jalapenos and cook until onions and Jalapenos are glazed. Pour egg mixture into skillet with potato’s, onions and jalapenos. As mixture begins to set at bottom and side, gently lift cooked portions with thin spatula. Add bacon now.
